From its infancy ten years ago, production of this salmonid species, destined almost exclusively for export, has exploded as global demand for salmon continues to grow, despite criticism of intensive aquaculture. More than 78,000 tonnes of this trout bred on the cold coasts of northern Turkey were exported in 2024, sixteen times more than in 2018. This business brought in over 430 million euros for Turkish producers over the year, a figure set to grow, but still a long way from the 11 billion euros in exports achieved in 2024 by the Norwegian salmon and trout behemoths.
