“Hand-Stretched Noodles”. It was Eidal-Adaha Festival, an important holiday for Uyghur people. I was invited to a Uyghur family for lunch. The hostess was very kind and hospitable. She made hand-stretched noodles for me. After the dough was workable, she shaped it into a roll. Then she began to stretch it. Soon a bundle of noodles was in her hands before I realized.
